Someone told me this Pepián is the best in all of Guatemala. And, indeed, the spice balance and the thick texture of the sauce are impeccable; the problem lay in the meats and tortillas.nnToday I ordered the three-meat Pepián, which includes chicken, pork, and a piece of beef. Of the three, only the chicken tasted normal. The pork had an unpleasant odor: a mix of foul animal odor with that typical freezer smell, something that was also noticeable in the tortillas. It's that smell you find in supermarket meat products that aren't fresh, or even in tap water.nnThe beef was also unsatisfactory, both in terms of the cut and the cooking method; it felt like eating grass. While there were good elements, when others fail so obviously, the entire dish suffers, and the good stuff is lost in the errors.nnFor the price and my expectations, I regret to say I can only give them one star. I hope they really improve. The second star is solely for the mole sauce.
